Mushroom, Tomato and Basil Frittata

½ medium onion, minced
2 Tbsp chicken broth
3 medium garlic cloves, pressed
1 cup sliced mushrooms
½ medium tomato, diced
3 large eggs
3 Tbsp chopped fresh basil
Salt and black pepper to taste
Heat 1 Tbsp broth in a 10-inch skillet. Saute’ onions over medium low heat for 3 minutes stirring frequently, then add garlic and mushrooms. Continue to saute’ for another 2 minutes. Add 1 Tbsp broth, tomato, salt and pepper, and cook for 1 minute. Add chopped basil, salt and pepper. Pour eggs evenly over the vegetables and turn heat down to low. Cover and cook for approximately 5 minutes, or until the mixture is firm. Cut into wedges and serve.
