Here’s a warm and tasty soup for you and your family to enjoy on this special holiday eve…

Garden Vegetable Soup

1 Tbsp extra virgin (or virgin) olive oil
2 cloves garlic
1/2 cup onion (diced)
1/2 cup carrot (sliced)
3 cups chicken broth (or vegetable broth or bouillon)
2 Tbsp tomato puree
1/4 tsp sea salt
1/4 tsp dried oregano
1/2 tsp dried basil
1/2 cup green beans
1 1/2 cups green cabbage (chopped)
1/2 cup zucchini (diced)

Give a healthy sauté to the garlic, onions and carrots in the olive oil. Add the broth, tomato puree, sea salt, oregano, basil, green beans and cabbage. Simmer about 15 minutes until the vegetables are nearly tender. Add zucchini, and cook another 5 minutes. Then serve and enjoy!
