Dr. Cutler’s Whole Food Recipes… Blueberry Pancakes

Blueberry Pancakes

2 cups fresh ground flour
¾ cup water with squeeze of lemon
¾ cup buttermilk
½ tsp sea salt
1 tsp baking soda
2 eggs
2 Tbsp melted butter or coconut oil
½ cup frozen blueberries (optional to use raisins, Craisins® or other small fruit)
Soak flour in lemon water and buttermilk overnight for 12 hours. Add remaining ingredients in the morning and mix together to form the batter. Pour large spoon-size amounts of the batter on a hot griddle or skillet. When bubbles appear, flip the pancake gently. Cook a few more minutes until it is done as desired.
I like my pancakes topped with homemade applesauce (fresh apples are boiled then mashed and sprinkled with cinnamon) or organic maple syrup or honey.
