Breakfast Cereal Substitutes

Dear Dr. Cutler,

I noticed that when you’ve spoken about blood sugar, you’ve indicated that the breakfast cereals eaten by most Americans are trademarked packages of processed foods. It’s my hope that modern Americans can learn to eat better breakfasts than the boxed cereal selections. I eat a daily rotation of seven different whole grains for less than $2.00 per pound, and I drink raw cow milk while my partner drinks rice milk with the cereal. Would you allow me to share the recipe combinations I use?

The following recipes are for two adult servings per meal and the whole grains are available in bulk at a whole foods market…

  • Amaranth—1/4 to ¾ cup water. Add banana, flax oil and coconut oil.
  • Buckwheat—1/3 to ¾ cup water. Add banana, flax oil, maple syrup, hazelnuts and coconut oil.
  • Millet—1/3 to 1 cup water. Add almonds, raisins, fresh fruit, milk and coconut oil.
  • Oatmeal—1/8 cup dry oatmeal to 1 cup milk. Add almonds, raisins, chopped fruit, flax oil, cinnamon and yogurt.
  • Polenta—1/4 to 1 cup water. Add grated parmesan or pecorino cheese (Italian cheese made from ewe’s milk), butter, walnuts, black pepper, gorgonzola cheese and flax oil.
  • Quinoa—5 teaspoons to 1 cup water. Add banana, flax oil and coconut oil.
  • Brown rice—3/4 to 1½ cups water. Serve 3 teaspoons of cooked brown rice per serving with almonds, raisins, chopped fruit, milk and coconut oil.
