Citrus Chicken Pitas

Citrus Chicken Pitas
4 chicken breasts (boneless, skinless and cut into strips)
Citrus Marinade (recipe below)
Lime Dressing (recipe below)
Pita bread (8 pita pockets)
Green and red cabbage (shredded)
Green, red, yellow and orange peppers (sliced)
Red onion (sliced)
Tomato (sliced)
Marinate the chicken strips in the Citrus Marinade (recipe below) for 1 to 2 hours or overnight, if possible. Heat a grill pan or nonstick skillet over high heat, then pour both the chicken and its marinade into the pan. Grill the chicken strips in the marinade until they are done throughout and the juices no longer run pink. If you prefer your veggies a little softer, you may sauté them in sesame oil until they’re the texture you prefer.
Now you are ready to build your Citrus Chicken Pitas. Fill the pita bread with chicken and 1 tablespoon of Lime Dressing (recipe below). Add in shredded cabbage, sliced peppers, sliced red onion and sliced tomato. Whether it’s for lunch or dinner, you’re sure to enjoy these mouth-watering sandwiches that are so good… they’ll make you forget that they’re also good for you.
Citrus Marinade
2 oranges (juiced)
2 limes (juiced)
1 lemon (juiced)
1 tsp fresh ginger (grated)
5 garlic cloves (minced)
1 jalapeno (roasted, seeded and finely chopped)
½ cup chopped cilantro
2 Tbsp olive oil
Mix the orange juice, lime juice, lemon juice, ginger, cloves, jalapeno, cilantro and olive oil together to make a marinade.
Lime Dressing:
½ cup nonfat mayonnaise
1 lime (juiced)
Garlic powder
Mix together the nonfat mayonnaise, lime juice and garlic powder until smooth and well-blended.
