Fresh No-Bake Lemon Pie

Fresh No-Bake Lemon Pie
Crust
2 cups soaked almonds, rinsed and drained
2 cups golden raisins, rinsed
Place the almonds and raisins in a food processor or powerful blender and blend well. Press and flatten the mixture into a glass pie plate.
Filling
2 cups medjool dates soaked in water for 15 minutes and then drained
¾ cups lemon juice, fresh-squeezed from real lemons
2 Tbsp lemon zest, finely grated from the peel of the lemon
Blend the dates, lemon juice and lemon zest in your food processor until they are smooth. Pour the mixture into your crust and chill your lemon pie until you’re ready to serve it. Enjoy this sweet and tangy treat after lunch or dinner… or as a delicious dessert following your holiday meal.
